1 Heat the slow cooker if necessary. Heat the oil in a large pan, tip in the lamb and brown for a few minutes.
2 Tip into the slow cooker pot and stir in the onion, carrots and leeks. Pour over the stock, and add the herbs and beans. Cover and cook for 5–6 hours on High until the lamb is tender. Serve with some crusty bread or potatoes, if you like.
